3 lbs Chicken, cut up
Salt, Pepper, Nutmeg
2 Tbsp Oil

½ cup Onions, chopped
1 cup Celery, sliced diagonally
2 Carrots, thinly julienned
1 cup Green Pepper, cut in chunks

¼ cup Brown Sugar
¼ cup Vinegar
¼ cup Soya Sauce
½ tsp Salt
14oz. can Pineapple Tidbits, ¾ cup syrup reserved

2 Tbsp Cornstarch
2 cups Chicken Broth
¾ cup Pineapple Syrup

1 cup Rice, uncooked


Directions:

Preheat oven to 350ºF
Season chicken with salt, pepper and nutmeg. Brown in hot oil.
Remove chicken and add onion, celery, carrots and green peppers. Sauté until onions are transparent. Add brown sugar, vinegar, soya sauce, salt and pineapple.
Add cornstarch, chicken broth, and pineapple syrup. Cook until thick and clear.
Place chicken in a roaster and sprinkle rice around it. Pour sauce over the chicken, cover and bake for 1-1½ hours.
