¾ lb. boneless chicken breast, cut into 1" cubes
1 tbsp. oil

15 oz. jar salsa
¾ c. chicken broth
½ c. diced green bell pepper
¼ c. sliced ripe olives
1 c. Instant rice

½ c. shredded cheddar cheese

Directions:
Directions:
In large skillet, Cook chicken in oil, about ten minutes or until no longer pink, stirring often. (Or use rotisserie chicken or other pre-cooked chicken.)

Add next five ingredients. Stir to blend slightly, and bring to boil. Reduce heat, cover pan and allow to simmer 5 - 10 minutes, stirring once or twice. When rice is done and most of liquid absorbed, turn off heat and sprinkle cheese on top. Cover and allow to set five minutes for cheese to melt and more liquid to be absorbed.

This dish can be adjusted to suit personal tastes. Use hot or mild salsa and add jalapeño peppers if wanted. I always add a tbsp. sugar, to cut the acid taste of tomatoes in the salsa.
