1½ -2c cooked rice
¼ c raisins
2 eggs
1½ c milk
1/2 c sugar
1/2 tsp nutmeg

Directions:
Directions:
1. Place rice and raisins in greased 1-qt casserole dish. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice.
2. Bake, uncovered, at 375ºF for 45-50 minutes or until a knife inserted in the center comes out clean.

We used to have rice pudding at the farm often. This is an easy recipe if you have leftover rice.
