Maid of Honour Tarts Recipe

cup butter
cup sugar
1 egg slightly beaten
cup flour
tsp baking powder
3 tsp grated lemon rind
jam of choice

Cream butter and add the sugar then blend in beaten egg.
Sift together flour and baking powder.
Add the cream mixture with lemon rind.
Line tins with pastry and place tsp jam in bottom of each tin.
Place 1 tsp of cake mix on top.
Bake in oven at 450F for first 10 minutes then reduce to 350F and bake for 20-25 minutes or until tarts are delicately brown.
