¼ cup butter
¼ cup sugar
1 egg slightly beaten
½ cup flour
½ tsp baking powder
3 tsp grated lemon rind
jam of choice
pastry

Directions:
Directions:
Cream butter and add the sugar then blend in beaten egg.
Sift together flour and baking powder.
Add the cream mixture with lemon rind.
Line tins with pastry and place ½ tsp jam in bottom of each tin.
Place 1 tsp of cake mix on top.
Bake in oven at 450ºF for first 10 minutes then reduce to 350ºF and bake for 20-25 minutes or until tarts are delicately brown.
