2 eggs
1 tsp lemon juice
1 cup sugar
1 cup flour
1 tsp baking powder
⅛ tsp salt
cup hot water

Schwizel icing:
5 Tbsp brown sugar
2 Tbsp milk
3 Tbsp butter
cup coconut

Directions:
Directions:
Beat eggs until light (3 mins).
Add sugar gradually beating constantly.
Sift flour, baking powder and salt well.
Fold into egg mixture (do not beat).
Stir in milk carefully.
Bake in a shallow pan for 30 minutes at 350F.
Spread icing while still hot.

SCHWIZEL ICING: Bring all icing ingredients to a boil for 3 minutes and let cool then slightly cover cake.
