2 cups sugar
2 cups vinegar
2 cups water
2 tbsp pickling spice (in cheesecloth bag)
Beets, peeled, boiled lightly and diced into bite size pieces

Directions:
Directions:
Mix all ingredients, but beets, together.

Bring to a boil.

Simmer 15 minutes.

Pour over hot beets, which are diced and in sterilized/hot jars.

Leave a bit more than 1/4 inch head room from top.

Put jars in a hot water bath for 15 minutes
