2 tbsp olive oil
1 medium onion, chopped
4 cloves garlic, finely chopped
1 (6 oz) can tomato paste, no salt added
¼ cup red wine
2 (28 oz) cans peeled tomatoes (crushed or puréed)
2 tbsp agave nectar
1 tsp Himalayan salt
¼ tsp pepper
1 (3oz) Parmesan cheese rind (optional)
3 tbsp finely chopped fresh basil

Directions:
Directions:
* Heat oil in large saucepan over med. heat. Add onion, cook 5-6 mins until onion is translucent
* Add garlic and tomato paste and cook stirring constantly for 2 or 3 mins. Do not let tomato paste burn
* Add wine, stir constantly for 2 or 3 mins then add tomatoes, agave, salt, pepper.
* Bring to a boil, stirring frequently. Reduce heat to low, gently boil stirring occasionally for 3 mins
* Add cheese rind, stir occasionally and simmer for at least 1 hour
* Add basil before serving
