Ingredients:  
¼ c. French green lentils

6 c. Chopped Pumpkin or Butternut Squash

3 T. Olive oil
1 tsp. Ground Cumin
1 tsp. Smoked Paprika
½ tsp. Salt
1 T. Red Wine Vinegar

4 c. Arugula
1 c. Goat Cheese
¼ c. Chopped Mint

Directions:
Directions:
Part1 - Geen Lentils
Rinse and soak for 10 minutes.
Drain and place in salted boiling water. Boil gently for 30 minutes or until tender & firm.
Drain and set aside.

Part 2 - Pumpkin or Squash
cooked until tender.
Set aside.

Part 3 - Oil, Spices, Salt & Vinegar
Mix top 5 ingredients together.

Part 4 - Final
Combine Lentils with Squash, Arugula, Mint and crumbled Cheese.
Toss and add Viniagarette.
