1 6oz can tomato paste
1 6oz can of water
1/2 c peas
3 c cooked rice (not minute)
1/4c parsley chopped
2-3 eggs
1/2 lb ground beef
3 mozzerella sticks cut into 4 pieces
1 sm onion chopped
grated pecorino romano cheese
S & P to taste
breadcrumbs

Directions:
Directions:
In a frying pan, saute onions until soft, add beef and S & P until cooked through. Drain add tomato paste and water to the beef mixture and and cook for about 10 minutes. Add peas and cook 2-3 minutes more. Let it cool then refrigerate. Cook 3 cups of rice as directed on the package, then let cool for 15 minutes. Mix cooled rice with parsley and grated cheese. Add eggs one at a time until rice is pliable and sticks together. Refrigerate 2-3 hours. Put some rice in the palm of your handfill with 2 tbsp of the meat mix and 1 piece of mozzerella. Cover with more rice and form a ball. Roll in the breadcrumbs and deep fry until golden brown
