3# lean beef brisket, cut into chunks
2 quarts water
16 oz tomatoes, chopped
2 small onions, chopped
4# cabbage, coarsely chopped
2 tsp salt
c sugar
-1 tsp sour salt
carrots, peeled and in large chunks
celery, cut in chunks

Combine beef, water, tomatoes, and onions in a large pot.
Bring to a boil, skim off fat.
Cover with lid slightly ajar.
Cook over medium heat for 1 hour.
Add cabbage, carrots, celery and salt.

Combine sugar and sour salt. Add to pot. Adjust to taste.
Continue until brisket is tender.
