1/2 C oil 1/3 C wine vinegar 5 cloves chopped garlic 2 1/2 tsp salt 1/2 tsp pepper 1 tsp basil 5 C cubed zucchini 1 C cubed eggplant 1 1/2 chopped green pepper 1 1/2 C sliced onion 1 large can tomatoes drained
1. Heat oil, vinegar, garlic and spices. Add vegetables and cook 20 to 30 minutes.
