1 clove garlic, minced
3 Tbsp. flour
1 tsp salt
1 tsp dried basil
1/2 tsp pepper
3 cups chicken broth
2 large baked potatoes, peeled and cubed
1 cup half-and-half cream
1/2 tsp tabasco sauce
shredded cheddar cheese
minced fresh parsley
bacon pieces

Directions:
Directions:
Saute onion and garlic in a splash of olive oil until tender. Stir in flower, salt, basil and pepper; mix well. Gradually add broth. Bring to a boil- boil and stir for 2 minutes. Add the potatoes, cream and tabasco sauce. Heat through but do not boil. Garnish with bacon, cheese and parsley.

This potato soup recipe is quick to make and great for cold nights! We usually double the recipe to eat on it for a couple days. I also usually make it with whole milk instead of the half and half and it is still very creamy.
