1 DOZEN EGGS, SEPARATED
2 CUPS UNSIFTED POWDERED SUGAR
½ TSP. CREAM OF TARTER
1 TSP. VANILLA
NUTMEG

IN LARGE BOWL, WITH WHISK, BEAT EGG YOLK AND POWDERED SUGAR UNTIL CREAMY. IN SEPARATE BOWL, BEAT EGG WHITES AND CREAM OF TARTER WITH ROTARY BEATER UNTIL STIFF. GENTLY, BUT THOROUGHLY STIR BOTH EGG MIXTURES AND VANILLA TOGETHER.

TOM AND JERRY:
POUR 1 JIGGER OF RUM INTO CUP. ADD 2 SPOONFULS OF BATTER. TO RUM. FINISH FILLING CUP WITH HOT WATER. STIR AND GARNISH WITH NUTMEG, IF DESIRED.

IF USING THE SAME ROTARY BEATER TO BEAT THE YOLKS AND THE WHITES, BE SURE THE BEATER IS THOROUGHLY WASHED BEFORE BEATING THE EGG WHITES. THE OIL FROM THE YOLKS WITH BREAK DOWN THE PROTEINS IN THE WHITES SO THEY WON'T STIFFEN.
