CARAMEL FLAN

3 LARGE EGGS
½ CUP SUGAR
¼ TSP. SALT
1 TSP. VANILLA
2 ½ CUPS MILK

PREHEAT OVEN. IN MIXING BOWL, BEAT TOGETHER EGGS, SUGAR, SALT AND VANILLA WITH WHISK. ADD MILK. P0UR INTO 8X8” BAKING DISH OR 6 CUSTARD CUPS. SPRINKLE WITH NUTMEG. SET IN BAKING PAN WITH ABOUT 1 INCH HOT WATER. BAKE 45 TO 50 MINUTES FOR CUPS OR 50 TO 55 MINUTES FOR BAKING DISH, OR UNTIL KNIFE INSERTED NEAR CENTER COMES OUT CLEAN.

SPRINKLE SUGAR INTO BAKING PAN OR CUSTARD CUPS TO COVER BOTTOM ABOUT ¼” THICK. I WOULDN'T RECOMMEND GLASS. SET UNDER BROILER ABOUT 8” FROM ELEMENT. BROIL UNTIL SUGAR IS GOLDEN. BE CAREFUL!!! IT’S EASY TO BURN THE SUGAR. LET COOL. CONTINUE AS FOR CUSTARD.

2 CUPS SOFT OR DRIED BREAD CUBES, CINNAMON ROLLS, ETC.
1/4 TSP. CINNAMON
RAISINS, RHUBARB, BLUEBERRIES OR ANY DESIRED FRUIT.

ADD ¼ TSP. CINNAMON TO SUGAR FOR CUSTARD AND OMIT NUTMEG. PLACE 2 CUPS SOFT OR DRIED BREAD CUBES IN BAKING DISH. SPRINKLE DESIRED AMOUNT OF RAISINS ON TOP OF BREAD. POUR CUSTARD OVER BREAD CUBES. BAKE AS FOR CUSTARD.
