1 8 OZ. PKG. CHOPPED DATES
2 CUPS CHOPPED NUTS
1 CUP FLAKED COCONUT
3 ¼ CUPS FLOUR
½ TSP. SALT
1 CUP BUTTER OR MARGARINE, SOFTENED
1 ½ CUPS GRANULATED SUGAR
4 EGGS
½ CUP BUTTERMILK

300º 2 LOAF PANS

SIFT TOGETHER FLOUR AND SALT. ADD ½ CUP OF FLOUR MIXTURE TO CANDY, DATES, NUTS AND COCONUT AND MIX TO COAT. IN VERY LARGE BOWL, CREAM BUTTER AND SUGAR TOGETHER UNTIL FLUFFY. WHISK IN EGGS, ONE AT A TIME, BEATING WELL AFTER EACH ADDITION. COMBINE SODA AND BUTTERMILK IN 2 CUP LIQUID MEASURING CUP. ALTERNATELY ADD FLOUR AND BUTTERMILK TO BUTTER MIXTURE, BEGINNING AND ENDING WITH FLOUR (3 TIMES). ADD CANDY MIXTURE AND BLEND VERY WELL WITH WOODEN SPOON. CUT WAXED PAPER TO FIT IN BOTTOM OF PANS. INSERT WAXED PAPER IN PANS. SPOON BATTER INTO PANS. BAKE FOR 1 HOUR AND 45 MINUTES OR UNTIL TOOTHPICK COMES OUT CLEAN WHEN INSERTED IN CENTER OF CAKE.

COMBINE ORANGE JUICE AND SUGAR AND MIX WELL WITH WHISK. POUR OVER HOT CAKES. COOL IN PANS. WHEN COOL, CUT AROUND SIDES OF PAN AND REMOVE CAKES. PEEL WAXED PAPER OFF BOTTOM OF CAKES.

My mom called this a fruitcake. I don’t because I think it’s too good to call a fruitcake. If I do call it a fruitcake, a lot of people won’t even try it. I think its addictive.
