350º 9X12" CAKE PAN

1 2/3 CUPS SUGAR
1 ¼ CUPS OIL
4 EGGS
2 TSP. SODA
1 TSP. SALT
1 ½ TSP. CINNAMON
2 CUPS FLOUR
2 JARS JUNIOR BABY FOOD CARROTS

CREAM CHEESE FROSTING:
4 OZ. SOFTENED CREAM CHEESE
2 TO 1 ½ CUPS POWDERED SUGAR
1 TSP. VANILLA

CREAM SUGAR, OIL AND EGGS TOGETHER WITH WHISK. ADD FLOUR, SODA, SALT AND CINNAMON. ADD CARROTS. BAKE IN GREASED AND FLOURED PAN FOR ABOUT 30 MINUTES OR UNTIL CAKE SPRINGS BACK WHEN LIGHTLY TOUCHED IN THE CENTER.

FROSTING:
WITH ELECTRIC MIXER, BEAT CREAM CHEESE AND VANILLA. ADD POWDERED SUGAR A LITTLE AT A TIME UNTIL OF A SPREADABLE CONSISTENCY. SPREAD ON COOLED CAKE.
