"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
36 Country Club-style crackers
c. grated Parmesan cheese
c. brown sugar
1 lb. bacon (thin sliced)

Directions:
Directions:
Preheat oven to 250. Lay the crackers on a rack set on a rimmed baking sheet. Place 1 Tbsp. of Parmesan cheese on half of the crackers and 1 Tbsp. of brown sugar on the other half of the crackers. Slice the pound of bacon in half, and wrap each cracker with a half-piece of bacon, tucking the end of the piece underneath the cracker. Bake them for about 2 hours. The bacon will cook slowly and start to wrap tightly around the crackers and the excess grease will drip off. Serve warm.
