3 tbsp. mayonnaise
1 tsp. spicy mustard
1 tsp. lemon juice
Pinch black pepper
Pinch garlic powder
1/4 of a small onion chopped
1/4 of a celery stalk chopped
2 cups chopped turkey (both white and dark meat)

Add mayo, mustard and lemon juice into a bowl and stir until it forms an emulsion. Next slowly stir in black pepper and garlic powder. The spices in this concentration will be strong, but will dilute when added to the turkey.

The turkey should be cut into small chunks no bigger than 3/4 inch square. Add the turkey and dressing into a bowl and stir until dressing is fully distributed into the turkey.

Each turkey has its own unique flavor and moisture content which means "adjustments" might be required before serving. Taste test the batch before serving and add extra dressing or individual ingredients based on your own desire. You will get very good at this after a few attempts.
