10 lbs ripe tomatoes
2 c celery
2 c green peppers
2 red peppers
5 lbs onions

Directions:
Directions:
Peel tomatoes, chop vegetables, then sprinkle with a scant 1/2 c coarse salt. Let sit overnight. Drain in a cloth bag. (I let bag hang as there will be a lot of juice coming out of the vegetables, The more juice that comes out while dripping the thicker the relish.)
Add 3 c vinegar and 3 c sugar. Boil to cook vegetables, then seal in jars. I process in hot water bath for 10 minutes. Makes about 7 pints.
