Ingredients: 1 cup reduced fat ranch salad dressing 3 tbsp. adobo sauce 2 tbsp. minced fresh cilantro 2 tbsp. lime juice 2 lbs. Basa fish cut into 1 inch strips 1/4 tsp. salt 1/4 tsp. pepper 2/3 cup all purpose flour 3 eggs beaten 2 cups panko bead crumbs 1 cup canola oil 16 corn tortillas (warmed) 3 cups shredded cabbage 1 fresh jalapeņo sliced 1/4 cup each of red and green bell pepper diced 1/4 cup chopped onion
Sauce 1 cup mayonnaise 1/2 cup sour cream 2 tsp chipotle chili peppers

Directions: |
Directions:In a small bowl combine all the ingredients for the sauce. Chill until serving. Sprinkle Basa with salt and pepper. Place the flour, eggs, and bread crumbs in a separate shallow bowl. Coat Basa with flour then in eggs and coat with bread crumbs. In a large skillet heat oil over medium heat. Cook fish 2-3 minutes on each side until golden brown. Drain on paper towels. Place fish in tortillas and top with cabbage mixture and sauce, and more cilantro chopped. Serve with lime wedges and more sour cream (if you want more sour cream) |
