16 ounces New York Sharp Cheddar cheese
16 ounces medium cheddar cheese
16 ounces Velveeta cheese
salt and pepper to taste
3 Tbsp sugar
8 ounces diced pimentos
16 ounces Miracle Whip salad dressing

(Optional-- a dash or two of tabasco)

Grate the cheeses into a large bowl. Add remaining ingredients, mixing well.
Be careful with the optional Tabasco sauce-- it could make it spicy )

Refrigerate, and use up to 2 weeks for sandwiches or with crackers.
Sometime served with strawberry jam in a sandwich--- try that.

This recipe is used at the Rosalind Club in Orlando for some occasions.
That is why the proportions are so large, but it is easy to cut in half, or even thirds, for home use.

The tabasco sauce was my addition to the recipe-- just for a spicy taste. But entirely optional.
I like to make sandwiches with strawberry jam and pimento cheese on a whole grain bread--cut in half, for lunch.
It is a great snack with crackers, or as an appetizer, too.
