C. buttermilk (see note for how to make buttermilk)
1 C. all-purpose flour
2 T. white sugar
1 t. baking powder
t. baking soda
t. salt
1 large egg
2 T. butter (melted)
1 t. vanilla

Directions:
Directions:
1. Combine the dry ingredients in a bowl.
2. In a smaller bowl, whisk the buttermilk milk, egg, vanilla and melted butter together.
3. Pour into the dry ingredients and whisk by hand until most of the lumps are gone, but DO NOT OVER BEAT!
4. The batter will be thick, don't add any more liquid. LET THE BATTER SIT at least for 10 minutes, until you see bubbles in the batter.
5. GENTLY dip out (don't pour out) 1/2 cup of batter and place it on a buttered grill or frying pan.
6. Cook until bubbles appear on the surface of the pancake and then flip with a spatula and brown the other side.

IF YOU DON'T HAVE BUTTERMILK ON HAND YOU CAN MAKE SOME EASILY USING THIS SIMPLE RECEIPE!

Combine 3/4 cup of milk and 2 tablespoons of vinegar in a small bowl for 10 minutes to make buttermilk. You won't taste vinegar in the finished product, by the way!

Try these, your family will thank you. I think they are yummy! I usually throw in some blueberries after I drop the batter into the skillet. A little more butter on top doesn't hurt the taste either! Oh, and don't forget the maple syrup...LOTS of maple syrup!!!
