1 10 oz. package chopped frozen spinach
1/4 C. shredded reduced fat pepper jack cheese
1 C. grated imported Parmesan Reggiano cheese
2 14 oz. cans artichoke hearts packed in water rinsed & drained
1/2 C. light mayo
1/2 C fat free ricotta cheese
2 t. fresh lemon juice
1/4 t. ground red pepper
Vegetable Dippers--carrots, bell pepper, celery or whatever

Preheat oven to 350f. Spray a 1 quart baking dish with nonstick spray. Microwave the spinach according to package. Drain, let cool, & then squeeze dry. Transfer to a large bowl.

Meanwhile, make the topping, combine the pepper jack cheese and 2 T. of the Parmesan Cheese in a small bowl until blended.

Pulse the artichoke hearts in a food processor til smooth. Transfer the artichokes, to the bowl with the spinach. Sitr the remaining parmesan cheese, mayo, ricotta, lemon juice & red papper until well mixed.

Scrape into the baking dish, Sprinkle evenly with topping.

Bake uncovered, til filling is hot & cheese is melted, about 30 minutes.

Serve with vegetable dippers or crackers.
