Crust: 2 c graham wafer crumbs
1/4 c melted butter
Mix together and press on the bottom of pie plate. Save 2 tbsp. to sprinkle on top.

Filling; 11/2 c skim milk
1/2 tsp coconut extract
1 6-serving box Sugar Free Fat Free Vanilla pudding mix
2 c Cool Whip, thawed and divided
1/4 c shredded coconut

Directions:

Bake crust in oven for 10 minutes at 350F. Cool.

Filling; Pour milk into bowl add pudding mix and coconut extract and whisk until thick. Gently fold in 1 c of the Cool Whip and shredded coconut.

Once crust is cool add filling. Spread remaining Cool Whip on top and crumble the saved graham wafer crumbs.

Chill at least 1 hour.
