2 - 8 oz salmon

MARINADE
2 tbs brown sugar
1 tbs ginger
1 tsp Dijon mustard
1 garlic cloves
1/2 c soy sauce

VEGETABLES
Carrots, broccoli, snow peas, red pepper -- sliced
Olive oil, salt, pepper

Directions:
Directions:
1. Prepare marinade.
2. Place salmon in marinade and let stand for 15 min
3. Place salmon in 400º oven and bake 8 - 10 min.
4. Stir fry vegetables in olive oil. Salt and pepper as desired.
5. Add some marinade, if desired, and cook until vegetables are al dente.
6. Serve salmon over the vegetables.
