4 russet potatoes, sliced in 1/4 " slices
1 onion, sliced into rings
Salt and pepper to taste
3 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
2 cups milk
1/12 cups shredded cheddar cheese

Preheat the oven to 400º

Butter a 1 quart casserole dish.
Layer 1/2 the potatoes in the bottom of the prepared casserole dish. Top with onion slices and add the remaining potatoes. Season well with salt and pepper.

In a medium sized saucepan, melt the butter over medium heat. Mix in flour and salt, and whisk for a minute. Gradually stir in milk a little at a tome to avoid lumps in your sauce. When thickened, stir in cheese all at once and continue whisking until melted, about 30-40 seconds. Pour cheese sauce over potatoes and cover with foil
