12 large fresh jalapeños
1 (15oz. box) honey cornbread mix
Water, according to package directions
1 1/2 cups shredded cheddar cheese, divided
1 cup corn

Directions:
Directions:
1. Preheat the oven to 400ºF. Spray a sheet pan lightly with cooking spray.
2. Cut each jalapeño in half lengthwise. Remove the seeds and the pith. Place the cleaned peppers on the prepared baking pan.
3. In a medium bowl prepare the cornbread mix according to package directions. Add the corn and 1 cup of the cheese and mix well.
4. Fill each jalapeño with the cornbread mix and top with the remaining cheese.
5. Bake for 20 to 25 minutes, until the cornbread is cooked through and the cheese has started to brown.
