1 c. potato starch
salt and pepper to taste
3 shallots, sliced in rounds
oil, for frying

Directions:
Directions:
1. Combine potato starch, salt, and pepper in a ziploc bag. Add shallot rings and toss until shallots are coated well.
2. Heat oil in a frying pan.When oil is hot, add rings and fry until slightly browned,about 2 min. per side. place on paper towels to drain. Use as a garnish over short ribs.
