2 sweet potatoes, peeled and sliced into inch slices
c. olive oil
2 garlic cloves, mashed
⅛ t. pepper
t. salt

Directions:
Directions:
Preheat oven to 425. Add sweet potatoes to a large pot of water. Bring to a boil and boil for 20 minutes until soft. Meanwhile, in a bowl, whisk together oil, garlic, salt and pepper. Strain potatoes and place on a greased cookie sheet. Using a fork, press down on potatoes to create a lined impression. Drizzle oil mixture on top and bake for 20 minutes. Flip and bake for an additional 20 minutes, until exterior is beginning to brown and interior is soft.
