1 lb fresh or frozen shrimp
1/3 c water
1/4 c soya sauce
2 tbsp. apple cider vinegar
1 tbsp. cornstarch
11/2 tsp sugar
1 tbsp. oil
2 garlic cloves, minced
2 c broccoli florets
1 c thinly bias-sliced carrots
1 small onion, halved lengthwise and sliced
1 c sliced fresh mushrooms
2 c cooked rice

1. Thaw shrimp, if frozen. If using shrimp can be thawed in cold water. Rinse and pat dry, with paper towels. Set aside. In a small bowl combine water, soya sauce, vinegar, cornstarch, and sugar set aside.
2. Heat oil in wok or large frypan over med-hi heat. (Add more oil if necessary during cooking)
Cook and stir in garlic in hot oil for 15 seconds. Add broccoli, carrots, and onion cook and stir for 3 minutes. Add mushrooms, cook and stir for 1 to 2 minutes more or until vegetables are tender crisp. Remove vegetables from pan with slotted spoon. Stir soya sauce mixture . Add to pan; cook and stir until slightly thickened and bubbly. Add shrimp; cook about 3 minutes or until shrimp are opaque. Stir in vegetables; heat through. Serve with hot rice.
