3 eggs
1 c. potato starch
1 t. salt
t. pepper
c. oil
1 small or medium onion, chopped
3 cloves garlic, minced (optional)

Directions:
Directions:
Preheat oven to 350. Line a cookie sheet with parchment paper. In a large bowl, combine the eggs, potato starch, sugar, salt, pepper and oil. Mix with a fork until creamy. Spread the batter onto the prepared cookie sheet. Sprinkle garlic and onion on top. Bake @ 350 for 10 minutes. Remove from oven and cut into 2" squares. Return to oven and bake for an additional 30-35 minutes, until crackers are baked through and the edges start to brown.
