3 matzas broken into small pieces
3 eggs
salt and pepper to taste
oil, for frying
shredded American, muenster or mozzarella cheese, (optional)
diced onions, (optional)

Directions:
Directions:
Soak matzos in water and squeeze out water. Heat oil in frying pan. Add eggs, salt and pepper (and cheese and\or onions) and mix. Pour into frying pan ( you will probably get two portions from this batter). Fry until one side is crusty and turn over and do same. If fried without cheese or onions, can be served with jam or sugar.
