1 large white onion, thinly sliced
1 red bell pepper
1 yellow bell pepper
12 oz. boneless, skinless chicken breasts, sliced into thin strips
1/4 tsp. salt
1/2 tsp. ground cumin
Crushed red pepper flakes, sprinkle a little
1 fresh jalapeño sliced
4 flour tortillas
2 tsp. sour cream
1/4 c. cilantro, chopped

Directions:
Place sliced onion in a bowl; cover with ice water and refrigerate. Heat oven to 350º. Place bell peppers and jalapeño on a baking sheet and roast for 40 minutes. Remove peppers and jalapeno from oven and place in a paper bag and close. Allow peppers to cool, then slip off the skin, slice into thin strips and remove seeds. Heat a large skillet over medium heat, drain onions and add to pan, stirring frequently. As the excess water begins to evaporate, coat lightly with olive oil spray. Continue to cook onions until they are limp and brown, add peppers and stir. Increase the heat to medium high and add chicken strips, salt & cumin. Cook the chicken strips until slightly browned, add 1/3 c. water and bring to a boil, stirring frequently. When chicken is cooked thru and only 2 T. of water remains, remove pan from heat. Heat tortillas as package directs and fill each with the fajita mixture. Top with sour cream and cilantro.
