4 zucchini
4 oz. cream cheese
1/2 c. grated cheese
1/3 c. sour cream
1/4 c. thinly sliced green onions
Salt and pepper
Dash of crushed red pepper
Paprika to garnish

Directions:
Directions:
In a saucepan, parboil zucchini whole for 5 - 7 minutes. Cool in cold running water. Cut zucchini in half lengthwise and scoop pulp into a bowl. Add remaining ingredients (except paprika) to pulp and mix well. Spoon mixture back into zucchini shells, sprinkle with paprika. Bake at 350º for 30 minutes or until lightly browned.
