1 cup uncooked rice
2/3 cup stuffed olives, sliced
1/2 cup oil
1 onion, diced
2 cups water
1 cup grated Cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Preheat oven to 325.
Combine all ingredients. Transfer to a greased 1 1/2 quart casserole dish.
Bake at 325 for 1/2 hour covered, then 1/2 hour uncovered.
Serve piping hot.
