2 cups Almond Flour
1/3 cup + 1 Tbsp Flaxseed Meal
1 Tbsp. Whole Flaxseed
1/2 tsp. Salt
1 tsp. Baking Soda
1/2 cup Arrowroot Powder
6 Tbsp. Coconut Oil, melted
4 Eggs
1 tsp. Apple Cider Vinegar
1/2 cup Coconut Milk (I use canned, stir it up or you can use the kind in refrigerated section in grocery)
2 Tbsp Honey

Preheat oven to 350.
Mix almond flour, flaxseed meal, whole flaxseed, salt, baking soda and arrowroot powder.
Melt the coconut oil in microwave, only for a few seconds or it will boil over! Then cool it for a bit.
Put coconut oil, eggs, apple cider vinegar and coconut milk in mixer. Mix on medium speed for about a minute.
Then slowly add in dry almond flour mixture to wet., only mix til combined.
Spray loaf pan or line with parchment paper so it doesn't stick.
Sprinkle whole flax seeds on top of bread.
Put in oven.
Bake at 350 for 30-40 minutes OR until knife comes clean.
Let bread cool on wire rack.
Freezes perfect.

We call this "Un Bread" in our house. I started making it in 2010 or 2011 and love it. It's kind-of a hassle until you get it down. Having all the ingredients in your frig all the time is the first step. Then you can make it easily. When I make it, I like to make 2 or sometimes 6 loaves to freeze. And Daddy says you must 'double' toast it, ha! Love, Momma
