1 2/3 cup Flour
3/4 cup Sugar or less!
1 Tbsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
2 tsp. Coriander (heaping)
1 Egg
1 1/4 cup Mashed Bananas (3-4 frozen)
1/3 cup Butter or Vegetable Oil
1/4 cup buttermilk (I have used milk/vinegar substitution or yogurt or sour cream or even milk)
1 tsp. Vanilla Extract

Preheat oven to 350. Mix dry ingredients in bowl, except sugar. In mixer bowl, mix sugar, egg, bananas, oil or butter, buttermilk and vanilla. Mix wet ingredients until bananas are fairly smooth, then slowly add flour mixture. Grease 1 loaf pan with butter or baking spray or makes 12 muffins. Freezes great. Bake bread for about 50 minutes, muffins take less time, like 20 minutes. Knife should come out clean.
