1 lb. bowtie pasta
1/2 cup chopped green pepper
1/2 cup chopped carrots
1/2 cup chopped cauliflower florets
1/2 cup chopped zucchini
1/2 cup olive oil
1/2 cup cider vinegar
3/4 cup (or a little less) sugar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions:
Directions:
Cook pasta until al dente...rinse in cold water when done.
Combine the rest of ingredients and add to cooked pasta. Refrigerate. Right before serving, add 1/2 cup sliced red onion (or sliced green onion) and sprinkle with parmesan cheese.

My Mom's recipe. I love the light olive oil and red wine vinegar combination with the mix of crunchy vegetables. it is even better the next day after refrigeration. A wonderful summertime pasta salad!
