1 cup margarine, softened
1 cup sugar
2-1/2 cups all-purpose flour
1/2 cup pecans, finely chopped
2 tsps grated lemon peel
1/2 cup strawberry preserves
Powdered sugar

Preheat oven to 325º

Beat margarine and sugar in large bowl with mixer at medium speed until creamy.

Mix flour, pecans and lemon peel in small bowl; stir into margarine mixture until blended. Cover; refrigerate 2 hours.

Divide dough in half. Roll half the dough on floured surface to 1/8" thickness. With a floured 2-1/2" cookie cutter, cut out circles; using a smaller 1-1/2" circle cutter, cut out centers from half the circles. Repeat with remaining dough, re-rolling scraps as necessary. Place circles on ungreased baking sheets.

Bake 10-12 minutes or until lightly browned. Remove from sheets; cool on wire rack.

Spread about 1 teaspoon preserves on top of whole cookie; top with cookie with hole in it. Sprinkle with powdered sugar if desired.
