3-4 ripe bananas
6 tbsp. melted shortening or oil
1/2 c sugar
1 tsp salt
1 egg, well beaten
1 tsp vanilla
1 c flour
1/2 c bran
1 tsp baking soda
1 tsp baking powder
1/2 c chopped walnuts(chopped)

Directions:
Directions:
Mash bananas (should be 1c). Add shortening, sugar, and salt. Beat until well mixed. Add egg and vanilla. Beat again ( do this much in your mixer but no more) Sift flour, baking soda, baking powder over banana mixture and stir until moistened. Add nuts if desired. Place spoonfuls into 18 muffin cups. Bake at 350F for 15-20 mins.
