1 head of cauliflower, cut into florets
½ lbs. brussels sprouts, trimmed and quartered lengthwise through core

Salt and pepper
1 tsp. garlic chopped
½ panko breadcrumbs
¼ cup grated parmesan cheese
Olive Oil

Cheese Sauce:
1 Tbs. butter
2 T flour
1 cup 2% milk
½ cup grated white cheddar
1 tsp. oregano
1 tsp. thyme

Directions:

Heat oven to 425º

1. Place cauliflower, brussels sprouts, & garlic in baking dish. Drizzle olive oil over vegetables to coat. Roast for 30-40 minutes.

2. While vegetables are roasting, make cheese sauce.
Melt butter in sauce pan over medium heat. Add flour and stir until bubbly. Remove from heat and add milk. Return sauce to heat and bring to a boil, stirring constantly. Reduce heat and add cheese and herbs until melted.

3. When Vegetables are done. remove from oven and pour cheese sauce over top. Sprinkle breadcrumbs and Parmesan on top and dot with butter. Place back in oven for 15 minutes
