1/2lb. bay scallops
1T. lemon juice
1/2 pkg. rice stick noodles or 2 ounces any pasta
1T. balsamic or red wine vinegar
4 green onions
1 large tomato
1tsp. olive oil

Directions:
Directions:
Steam scallops 1-2 minutes in lemon juice, covered in microwave. Make pasta, drain. Remove seeds from tomato. Chop tomato and onions. Mix tomatoes, onions, vinegar and oil. Refrigerate for 2 hours scallops, pasta, and tomato mixture separately. Mix together just before serving with a twist of fresh ground pepper.
