1/2c. minced garlic
Fresh-ground pepper
1/2 head lettuce, shredded

Bake mussels in vinegar, garlic and pepper, until open. Serve over shredded lettuce in bowls, pouring on hot liquid which will wilt lettuce slightly and release its flavors. (Wine, tomato juice and other liquids may be substituted for vinegar. Olive oil can be added by those not watching their weight.
