1 small (8-12 ounce) catfish per person
cornmeal
salt and pepper
vegetable oil

Directions:
Wash cleaned fish and pat dry. Dip in corn meal, seasoned with salt and pepper to taste, and set aside. Pour oil in pan to depth equal to about half the thickness of the fish, and heat to 375º (a cube of bread will turn golden in 1 minute). Brown on both sides, drain on paper towel and serve with lemon wedges and pepper sauce plus coleslaw, and applesauce.
