"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
1/4lb. butter
3 garlic cloves, mashed
1lb. mushrooms, sliced
salt and pepper
1lb. very thin spaghetti
1T. olive oil
1lb. sea scallops

Directions:
Directions:
Star heating salted, oiled water for spaghetti. Pat the scallops dry while you melt half the butter in a skillet and saute the mushrooms with garlic, salt and pepper till done, about 10 minutes. Pour mushrooms with juice into warm bowl. Wipe out skillet with paper towel. Start the spaghetti. Melt the other half of the butter. Saute scallops, stirring gently, till starting to whiten. Pour mushrooms back in. Drain spaghetti, and toss it in a big bowl. Pour mushroom scallop mixture over and toss. Carry to table and serve 4, with mixed green salad and cold white wine. You can dress this dish up with spices, cream or wine boiled down into a rich sauce, but this basic recipe works very well for good cooks who don't have time to stay in practice.
