3 tbsp butter
1 lb sliced fresh mushrooms
1/2 cup chopped fresh onion
2 cups broccoli florets
2 tbsp olive oil
1 1/2 cups (6 oz) shredded Swiss cheese
9 eggs
1 tbsp
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
SautÚ mushrooms and onions in butter 10-15 minutes until brown and crusty. Steam broccoli in a basket over boiling water for 5-7 minutes until tender. Place broccoli in bowl, add olive oil and mash lightly with a fork until chunky. Add mushrooms, onions, and cheese. Stir with fork. Fill cupcake pan (with or without liners) 1/2 full with the mixture. Beat eggs,1 tbsp water, salt, and pepper until light and fluffy. Pour over first mixture until 3/4 full. Bake at 350║ for 12-15 minutes. Makes 10-12 cupcakes. Use spray shortening to coat pan if not using paper liners.
