Meatless Sloppy Joes Recipe

1 zucchini, (about 2 cups diced)
1 yellow squash (about 2 cups diced)
1 red bell pepper, chopped
1/2 red onion, chopped
4 cloves minced garlic
1 Tbs. barbecue sauce
15 oz can crushed tomatoes
tsp. oregano
tsp. basil
salt and pepper to taste
1-2 Tbs. ground flax seed (to hold mixture together)
pinch of crushed red pepper, optional

1. Dice veggies and saute in large pan with olive oil for 5 minutes. Add canned tomatoes, barbecue sauce, herbs, salt and pepper. Let simmer for 15 minutes, then add ground flax seed until thickened.

2. Toast buns and top with Provolone cheese or your choice.

Optional items: pickles, mustard, sriracha.
