1 ready to bake pie crust
1 1/2 cups fresh baby spinach
4 eggs
1/2 cup half and half
1/2 cup sour cream
1/3 cup sun dried tomatoes drained and chopped
1/4 tsp black pepper
1 tsp garlic salt
2 cups (8 oz pkg) shredded cheddar cheese

Directions:
Directions:
Place pie crust into 9" pie plate and crimp edges. Microwave spinach in a bowl for 2 minutes until wilted. Cool, squeeze dry, chop and set aside. Beat eggs and add half and half, sour cream, tomatoes, pepper and salt. Stir in spinach and 1 1/2 cups of cheese. Mix well and pour into crust. Bake at 350º for 35 minutes, top with remaining 1/2 cup of cheese, then bake for additional 5-10 minutes until melted.
