1 lb sausage
2 cups sliced fresh mushrooms (or 2 cans with liquid drained)
1 diced fresh onion
6 eggs
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1 tsp dry mustard
4 slices cubed bread
2 cups (8 oz bag) shredded cheddar cheese

Directions:
Directions:
Fry sausage in a skillet with mushrooms and onions and cook completely. Drain any excess fat and place mixture in a greased 9x14 baking dish. Beat eggs and stir in remaining ingredients. Pour egg mixture over sausage mixture and bake at 350 for 1 hour.

Casserole can be prepared the night before, covered, and refrigerated for a quick and easy breakfast. Remove from refrigerator one hour before baking to bring to room temperature, then bake at 350 for 1 hour.
